BREAKFAST RECIPES

Crunchy Cheese Pies

Ingredients:
  • 250gr margarine, at room temperature
  • 150ml groundnut oil
  • 200gr strained yogurt
  • 3 tablespoons kefalotiri or parmesan cheese
  • 1 sachet baking powder
  • 600gr plain flour, approximately
  • 1 teaspoon salt
Preparation Time:
25 minutes

Description

1. Place the margarine, yogurt, groundnut oil and salt in a bowl and stir well with a whisker or fork, until everything melts. Sieve the flour and baking powder together and add them, gradually, to the mixture. Knead until you end up with a dough that does not stick to your hands (don’t knead for too long).
2. Cover the dough and chill it in the fridge for 20 minutes. Then divide it into 35-40 equally sized balls.
3. Flatten each ball of dough by placing it between your palms. Put some filling on and then fold it to make a crescent. Use a fork to press down the seam, so as to seal the filling in.
4. Array the pies onto a greased baking tray. Place the tray on the middle shelf of a preheated oven and bake at 170ºC, for 30 minutes, until they turn golden.

Yogurt / Honey mousse

Ingredients:
  • 500 gr of melon
  • 500 gr of yogurt
  • 125 gr of thyme honey
Preparation Time:
10 minutes

Description

Mix in a blender the melon, the yogurt and the honey. Take a melon and cut it horizontally. Put out the seeds and use it as a bowl to put in the yogurt mix.

Yogurt Cream with fruits

Ingredients:
  • 250 gr of strained yogurt
  • 2 tea spoons of honey
  • 100 gr of fresh cream
  • 250 gr of biscuits
Preparation Time:
10 minutes

Description

1. Mix the yogurt and the honey, add the fresh cream and mix again.
2.Put the cracked biscuits in small bowls and then put the yogurt cream. Leave them in the fridge for two hours.
3.Cut the dried fruits and put them in cognac or liquor for a little while. Serve the yogurt cream with the fruits.

FOOD RECIPES

Chewy cheese pie

Ingredients:
  • a pack (450g) of filo pastry
  • 800gr mixed yellow melting cheeses (gouda, emmental, gruyere, cheddar), grated
  • ½ l fresh milk
  • 200gr yogurt
  • 1 can (330ml) soda pop
  • 5 eggs
  • 2 tablespoons baked bread crumbs
  • freshly ground pepper
  • ½ teacup of extra virgin olive oil
Preparation Time:
15 minutes

Description

Grease with butter or oil a baking pan and sprinkle with the baked bread crumbs. Line the bottom and sides with 3 filo sheets placing one on top of the other. Break all but 2 of the remaining filo sheets into pieces with your hands. Combine these pieces with the cheeses in a bowl. Add plenty of freshly ground pepper. Empty the lot into the baking pan and smooth it over. Cover with the last 2 filo sheets. Fold the edges of pastry hanging over the sides back over the pie. Use a sharp knife to score the pie into pieces. Pour the olive oil over the scoring lines. Whisk the eggs, yogurt, milk and soda pop together in a bowl and pour the mixture over the pie. Leave for 15 minutes until the pie absorbs the mixture. Preheat the oven to air 220ºC. Place the baking pan on the centre shelf of the oven, reduce temperature to 170ºC and bake for 1h until the pie rises and becomes golden and crispy.

Giouvetsi (beef stew with orzo pasta) au gratin

Ingredients:
  • 500gr orzo pasta, boiled and drained
  • minced meat sauce (see pastitsio recipe)
  • 2 tea cups of fresh tomatoes, grated
  • 5 eggs
  • 200gr strained yogurt
  • 1 water glass of milk
  • 250gr anthotiro cheese, crumbled
  • 250gr feta cheese, crumbled
  • salt
  • freshly ground pepper
Preparation Time:
10 minutes

Description

Put the boiled and drained orzo pasta in a greased ovenproof dish. Then drizzle with 2-3 tablespoons of olive oil and get the orzo well coated. Put the minced meat sauce on top and add the grated tomatoes. Whisk the eggs, add the yogurt and milk and combine everything well. Add the anthotiro and feta cheese to the eggs mixture, season with pepper and taste for seasoning with salt. Pour the eggs and cheese mixture over the orzo pasta and bake at 200ºC for 25 minutes in a preheated oven. Alternatively you can use meat instead of minced meat.

Tortelini with meat and yogurt

Ingredients:
  • 1 pack of tortellini with meat
  • 3 tea spoons of butter
  • 1 cup of yogurt
  • 1 cup of milk cream
  • Paprika
  • 4 slices of turkey
Preparation Time:
15 minutes

Description

We boil the tortellini pasta according to the instructions on the pack of it. In a bowl, we mix the yogurt, the milk cream, paprika and the turkey. We put the mixture in the tortellini pasta and serve.

DESSERT RECIPES

Fruit Salad With Cinammon Sirup

Ingredients:
  • 1 kg of fruits
  • 5 spoons of sugar
  • 2/3 cup of water
  • 3 cinnamon sticks
  • Lemon zest
  • 200 gr strained yogurt
Preparation Time:
4 Hours

Description

Wash and peel the fruits and put them in a bowl. Prepare light syrup in a pan: boil the sugar, the water, the cinnamon sticks and the lemon zest for 6-7 minutes. Leave the syrup for a little while, remove the cinnamon sticks and the lemon zest and then mix it with the fruits. Put it in the fridge for 3 hours and stir it once or twice before serving it.

Greek Honey Puffs with yogurt

Ingredients:
  • 2 cups of flour
  • 2 cups of strained yogurt
  • ¼ cup of cognac
  • 1 tea spoon of soda
  • Salt
  • Oil

Description

Put all the ingredients in a bowl and mix them. The mixture is very thick. Cover it with a cloth and leave it for two hours. Put the oil in a cooking pot. Take a small amount of the mixture with a spoon that you will first put in a glass with cold water and put it in the pot. Repeat this step until you fry all the mixture. When they are ready, put them in a plate. Put honey and cinnamon on top.

Yogurt / Honey mousse

Ingredients:
  • ½ tea spoon of yogurt
  • 120ml sugar milk
  • 1 tea spoon gelatin
  • 1 tea spoon liquor amaretto
  • 3 vanillas
  • 2 spoons of warm honey
  • Caramelized nuts or almonds

Description

In a bowl, mix the gelatin and 2 spoons of water Put in a blender, the yogurt, the sugar milk, the vanillas and the liquor. Add the gelatin and the honey and keep blending. Put the cream in 6 small bowls and leave them in the fridge for 5 hours. Garnish with the caramelized nuts or almonds.

SALAD RECIPES

Beetroot salad with yogurt 

Ingredients:
  • 1 kg boiled beetroots
  • 2 cloves of garlic
  • 400 gr of strained yogurt
  • 3 tea spoons of oil
  • 4 tea spoons of vinegar
  • Salt
  • Black Pepper
Preparation Time:
4 Hours

Description

Peel the beetroots after you have boiled them in order not to lose their color and cut them in small pieces. Chop fine the garlic and mix it with the yogurt and the other ingredients and then put the yogurt sauce in the beetroots. Put the beetroot salad in the fridge for an hour.

Chicken and rice salad

Ingredients:
  • 300gr basmati rice, boiled
  • 700gr chicken breast fillet, boiled
  • 1 tea cup of mayonnaise
  • 1/2 tea cup of yogurt
  • 1 teaspoon curry powder
  • 4 peaches-nectarines, cut in slices
  • 1 lettuce crunchy core, roughly torn
  • some fresh basil leaves, roughly torn
  • 1/2 tea cup of cashews nuts, unsalted
  • freshly ground pepper
  • salt

Description

Green salad with yogurt sauce

Ingredients:
  • 1 iceberg
  • 1 lettuce
  • Garden rocket
  • 1 big cucumber

Description

Wash and strain the vegetables. Put them in a salad bowl. Cut the cucumber and add it. In a bowl, mix the yogurt, the oil, the vinegar, the mint and the salt. Put the mixture in the salad, mix gently and serve.
